The maestro of meat, chosen of cheese, slayer of salami, and the Sinatra of salad… The Garde Manger Chef in charge of the Guest Lunches at Baldface Lodge has an elite crew to take care of. Remember that our little Lodge (4 cats with over 75 lunches to consider) is the epicentre of snowboard culture. We have guests that have waited their whole lives to come and shred with us. They also love to eat the Baldface Sandwiches and Salads. This is a big responsibility that our Garde Manger Chef balances on their broad shoulders (from cutting all that meat and cheese).
The Garde Manger Chef is a creative foodie that gets stoked about sharing new sandwich combinations and isn’t scared to serve the best PBnJ that anyone has ever had. (it happened, caramelized peanuts are the secret)
The Garde Manger Chef joyfully gets up pre-dawn and digs in with the team for a long and fulfilling day that culminates in plating the most delicious salads ever eaten at 2050 m. Whew, it’s a big deal, but by working together, the Baldface kitchen team gets it done!
